Cheese Straws

We made these cheese straws for FHE. Everyone loved them. We had no leftovers.

1 sheet of puff pastry, thawed
2 ozs. Parmesan or Asiago cheese, grated (1 cup)
1/4 t. salt
1/8 t. pepper

Adjust the oven racks to the upper and lower middle posiitions and heat the oven to 425. Lay puff pastry on a sheet of parchment paper and sprinkle with the cheese, salt, and pepper. Top with another sheet of parchment and , using a rolling pin, press the cheese into the dough, rolling to shape the dough into a 10-12 inch square.

Remove the top layer of parchment and , using a sharp knife (or pizza cutter) cut the dough into 3/4 in. wide strips. Gently twist each strip of dough by holding each end. Twist until it forms a lose straw.

Bake until the straws are fully puffed and golden brown about 10 minutes, reversing the position of the baking sheet from top to bottom halfway through baking .

I found that the cup of cheese is a lot, and quite a bit falls off when you are twisting them. I think you could cut the cheese in half.

I used a combination of Parmesian, Asiago, and Romano
