We liked this challenge because we both love soup! Especially during the winter months when it is freezing outside. We have our favorite soups that we seem to always make but this challenge got us out of the rut of making the same ones. We found this recipe in Cooking Light Fresh Food Fast cookbook. It is Sweet Potato, Leek, and Ham Soup. First time we have ever cooked with leeks. We loved the soup and will probably make it again. Thank you Erin for this fun challenge.
