How many peanutbutter bars do we have?

Here are our meals for our first week of sharing.

Sunday--Chicken Curry @ The Jackman's [Dad's Recipe]; broccoli; peanutbutter bars
Monday--Eggplant Parmesan [Test Kitchen Cookbook]; salad; peanutbutter bars
Tuesday--Eggplant Parmesan & salad again; and, of course, peanutbutter bars again (Thanks Lucy!)
Wednesday--Grilled Chicken Wings; potatoes and onions, ranch beans; salad
Thursday--Grilled Cheese, Ramen w/ corn, broccoli;
Friday--Lamb Shank [Turkish Restaurant]; turkish dip sampler
Saturday--Seared Tuna [Alton Brown]; corn; kiwis and strawberries; pistachio pudding

We had a delicious week and really loved the eggplant parmesan. The next time we get eggplant in our bountiful basket we will probably make it again.

We also fulfilled the Jackson's charcoal challenge with our tuna. We used a recipe that Andy had shown us a few years ago. We loved making it then, so the challenge was a good excuse to make it again. As you can see from the recipe link above, Alton Brown sears the tuna directly on top of the charcoal chimney. We have also seen the recipe called Jet Engine Tuna because it is so hot. It sears in 15-30 seconds per side, and is nice and tender. You must love raw tuna for this recipe to be appreciated  (I know some of you would not like this recipe!), and you have to buy really fresh tuna. We bought ours from the farmer's market.

Thanks for the challenge Jacksons! We forget how much we love to eat food grilled on charcoal.
