잡채 is the best!

Our meals for the week:

Sun. Juice cleanse
Mon. Juice cleanse
Tues. Miso Soup
Wed. White bean salad with lemon and cumin [Bon Appetit recipe]
Thurs. Sushi
Fri. Japchae w/ tofu [This is a staple at our house. It is a Korean dish we learned to make after eating it at a Korean BBQ. Here is a recipe link that is pretty close to what we do, although I do not know why they are putting that much sugar into the sauce! We only put a tbs at the most. This week we made it vegetarian, but we usually have it with beef.]
Sat. Roasted cauliflower with garlic, corn on the cob, shrimp sesame rice papers with veggies


The shrimp sesame rice papers were new for us. They were a lot thicker than normal rice paper and the directions said to fry them in oil instead of soaking them in water. We tried to soak first, but it did not work. As we fried them we realized that they were meant to be eaten like tostadas rather than spring rolls. They were very yummy, but not super healthy.
